Marinaded Herb and Mustard Chicken Breast

Ingredients: (for 3 chicken breasts)

  • 1 cup mustard of choice for example organic stone ground or organic honey dijon (link to primal kitchen)
  • 1/2 cup freshly chopped organic dill
  • juice of 1/2 organic lemon
  • 2-3 tablespoons filtered water

Directions:

  • mix together in a bowl
  • brush on chicken breasts and cook
  • or put the chicken breast in the marinade in the refrigerator until you are ready to cook it

I would pair the marinated herb and mustard chicken breast with these side dishes.

Roasted Broccoli Florets (side dish)

Ingredients:

  • 1 head of organic broccoli cut into florets
  • 1-2 tablespoons organic olive oil
  • 1/2 teaspoon salt

Directions:

  • preheat the oven to 400 degrees F
  • put broccoli florets in a mixing bowl and add the salt and organic olive oil and toss
  • spread out on a baking sheet
  • bake at 400 degrees for 20 minutes or until the edges are crispy
  • serve with the chicken

Curry Dry Rub Chicken Breast

Ingredients:

  • for 3 chicken breasts
  • 3 tablespoons organic curry powder (what ever strength you would like)
  • 2 tablespoons organic cumin
  • 1 tablespoon organic minced Garlic

Directions:

  • mix ingredients together in a bowl large enough to be able to dip the chicken breasts in
  • dip the chicken breast in the bowl and rub it in the dry rub
  • put it on a plate covered in the refrigerator until ready to cook

I would pair this with some cauliflower rice or sautéed carrots and zucchini.

Cauliflower Rice (side dish)

Sauté in a large skillet over medium heat in 1 tbsp organic oil. Use a lid to cover so the cauliflower steams and becomes more tender. Cook for a total of 5-8 minutes.

Sautéed Carrots And Zucchini (side dish)

This will serve one. You can always double or triple the recipe for more people.

 Ingredients:

  • 2 medium organic carrots
  • 1 organic zucchini
  • 1-2 tablespoons organic olive oil
  • salt and pepper to taste

Directions:

  • Thinly slice the carrots and the zucchini
  • Saute the carrots and zucchini in a pan over medium-high heat.
  • Sprinkle with salt and pepper and cook until golden brown and tender.
  • Stir occasionally so they don’t burn.
  • Put them on the plate and add a pat of butter.

Serve with the chicken.

Garlic And Herb Chicken Breast

Ingredients: (for 3 chicken breasts)

  • 1 cup fresh organic oregano
  • 1/3 cup roughly chopped fresh organic rosemary
  • 1/4 cup fresh organic thyme
  • 3 tablespoons organic minced garlic
  • juice of 1/2 organic lemon
  • 3-4 tablespoons organic olive oil

Directions:

  • mix all the ingredients  in a bowl large enough to put the chicken breast in
  • mix and cover and put in the refrigerator until ready to grill

Cucumber and Tomato Salad (side dish)

This will serve one. You can always double or triple the recipe for more people.

Ingredients:

  • 1 organic cucumber sliced
  • 1 cup of organic grape tomatoes
  • 2 tablespoons organic olive oil
  • juice of 1/2 an organic lemon.

Directions:

  • put the sliced cucumber and tomatoes in a mixing bowl
  • add the lemon and olive oil and toss
  • serve with the chicken breast

Pair this with organic veggies of choice. Like cauliflower rice or steamed broccoli.
