Ice cream cake has always been a favorite. However, I’m guessing that for most of us, any type of dairy just doesn’t want to digest properly. Not sure why, it receives plenty of love on the way down.
So tell me, do you miss that creamy chilled deliciousness? Either that or perhaps bite the bullet and deal with the stomach discomfort from time to time. Any of this sounding familiar? Well I promise if you keep reading you will be very pleased. There is now a way to enjoy the best of ice cream cake paradise and not have it attack you afterwards.

Her name is Olga. She is the miracle worker who has brought us this magical dairy free ice cream cake recipe. Oh it is vegan as well, just be sure to select the correct ingredients while at the grocery store. You will be so pleased at how easy it is to make. Especially the ice cream middle!
Just thaw slightly and scoop it out of the container! Ok let’s get started, you have an ice cream cake to make 🙂
Gluten Free Flour Blend
1½ cups of organic brown rice flour
1½ cups of organic sorghum flour
⅔ cup of organic tapioca flour
⅔ cup of organic arrowroot flour
Brownie Base (can be vegan)
1 tbsp of organic ground flaxseed
¾ cup of organic gluten-free flour (brown rice or gluten free oat flour)
1¼ cup of organic almond flour
½ cup organic cacao/cocoa powder
¼ cup of organic almond milk
1 cup organic cane sugar
⅓ cup of organic coconut oil, melted
½ cup of organic vegan chocolate chips
pinch of salt
2 pints of non-GMO So Delicious Salted Caramel Cluster Frozen Dessert
⅓ cup of organic walnuts, finely chopped
2 tbsp of organic coconut oil, melted
2 tbsp of organic cacao/cocoa powder
1½ tbsp of organic maple syrup
This is what you are going to end up with! If you like ice cream cake and aren’t friends with dairy anymore, this is going to be your new favorite. Be warned this is still a dessert. It’s not ideal to be integrated into breakfast, lunch, dinner and weekly meal prep’s.
