Gluten Free Falafel Of The Gods, Join Them In Deliciousness!
Falafel has to be one of my all time favorites, but most of the restaurants only have falafel with gluten in it. Gluten does not agree with my digestion. So when I was introduced to this version of gluten free falafel. I knew I had to share it with everyone! It’s so delicious and has all the right stuff in it.
I had to add in some of the information about how nutrition dense this is so you can see how much bang for your buck you are getting. According to Dr. Mercola, garbanzo beans are low in saturated fat and very low in cholesterol and sodium, also containing high amounts of folate (71 percent of the daily value) and manganese (84 percent), 29 percent each of the protein and copper you need, 28 percent of the phosphorus, 26 percent of the iron, and 20 percent of the magnesium. As well as fiber, thiamin, zinc and vitamin B6.It’s a perfect combination .Whether the beans are canned or cooked from scratch, you get similar nutrients.
It is a wonderful way to get in some of those leafy greens that most kids wouldn’t usually touch. I always double up on the recipe when I make these and put some in the fridge for lunches.
I usually serve these patties with organic hummus or a little organic lemon and organic olive oil drizzled over them. One of my favorite lunches is to make a lettuce(organic lettuce) wrap with some organic tomato slices the patties and some organic hummus. Because of the fiber in the patties, I don’t get the afternoon munchies.
Better Than Restaurant Falafel
- 4 cups stemmed and torn organic collard greens (one bunch), or swiss chard
- 1 15.5 ounce can organic chickpeas, rinsed and drained
- 3 medium to large organic cloves garlic, chopped
- 1.5 Tbsp organic tahini
- 1.5 Tbsp fresh organic lemon juice
- 1/4 tsp organic cumin
- sea salt and black pepper
- 3-4 Tbsp oat flour (ground from gluten free organic oats)
- ~ 4 Tbsp organic grapeseed or organic olive oil for cooking
