|5 Great Summertime Side Salads. Enjoy Them This Weekend!
Here are my favorite 5 great summertime side salads that are easy and delicious. They can be made for a family or doubled up to make for a crowd. I kept it simple and easy so that you can spend less time in the kitchen and more time enjoying the outdoor fun.
1) My Aunt’s Coleslaw
serves 6
Ingredients:
- 1 small head of organic cabbage (or a mix of 1/2 green 1/2 red organic cabbage) cored and shredded .
- or if you like a 1 lb bag of already shredded organic cabbage
- 1 8oz package organic bacon cooked and crumbled
- 2 hard boiled eggs pealed and chopped (optional)
- 1 tablespoon organic apple cider vinegar
- 1/3 cup primal kitchen avocado oil mayo
- 1 tablespoon organicville stone ground mustard
- salt and pepper to taste
Directions:
In a large bowl whisk together the apple cider vinegar, avocado oil mayo and mustard.
Add the cabbage and bacon and egg and toss lightly to coat.
Add salt and pepper to taste
Refrigerate over night or for at least 2 hours before serving.
2) Red Potato Salad
serves 4-6
Ingredients:
- 2 pounds organic yukon gold potatoes cubed
- 1 8oz package organic bacon cooked and crumbled
- 1 small chopped organic onion (optional)
- 1/2 cup organic avocado mayo
- 1 tablespoons organic apple cider vinegar
- 1 tablespoon organic honey mustard
- 1/2 teaspoon salt
- freshly ground black pepper
- 1 tablespoon minced organic garlic (about 3 large cloves)
- 1/2 cup chopped fresh organic parsley
- 1 teaspoon salt
Directions:
- Place potatoes and salt in a large saucepan and cover with water.
- Bring to a boil.
- Reduce heat, cover and cook for 10-15 minutes or until tender. Drain.
- In a large bowl whisk together the mustard, mayo, apple cider vinegar and garlic .
- Add the crumbled bacon potato and onion and toss.
- Add pepper to taste.
- Refrigerate over night or at least 2 hours to let the flavors blend.
3) Ranch Avocado Broccoli Salad
serves 6
Ingredients:
- 3-4 cups finely chopped organic broccoli
- ½ cup organic sunflower seeds
- 1/2 cup organic walnut pieces
- ½ cup finely chopped organic red onion
- 1 8oz package organic bacon cooked and crumbled
- 1-2 avocados diced
- 1/2 cup Primal Kitchen ranch dressing with avocado Oil, dairy-free
Directions:
- In a large bowl put the chopped broccoli, bacon, sunflower seeds,walnut pieces and chopped red onion.
- Add the salad dressing and toss.
- Refrigerate over night or for 2 hours.
- When getting ready to serve
- add the avocado and toss.
4) Cucumber Dill Feta Salad
serves 4-6
Ingredients:
- 2 organic english cucumbers thinly sliced
- 2 tablespoons chopped organic dill
- 2 organic lemons juice
- zest of 1 of the organic lemons
- 2 oz organic olive oil
- 1/4 cup thinly sliced red onion
- 1 cup crumbled organic feta cheese
- optional 1-2 small organic avocados
Directions:
- In a large bowl whisk the lemon juice, lemon zest, dill and olive oil .
- Add the cucumber, onion and feta cheese and avocado (optional)
- Toss lightly to coat and serve.
5) Apple Blueberry Pear Romaine Salad
serves 4-6
Ingredients:
- 3 organic romaine lettuce hearts coarsely chopped
- 1/4 cup organic chopped walnuts
- 1/3 cup organic blueberries
- 1 diced organic apple
- 1 diced pear
- 1/2 cup Annie’s organic balsamic vinaigrette
Directions:
- Place all ingredients in a large bowl
- Toss and serve
