Coconut Curry Chicken Noodle Soup

Chicken noodle soup has always been a crowd favorite. We cook and eat chicken noodle soup when the weather is too cold, when we are not feeling well, or when we just wanted a taste of home.
What is not to love about the classic chicken noodle soup? Succulent chunks of tender chicken, filling pasta, zesty cilantro, aromatic sweet bell peppers, slightly sweet red onions, oh just thinking about how Mama used to make it back home makes me drool already.
This recipe, though, courtesy of our friends at No Spoon Necessary, is a combo of the classic chicken noodle soup plus a kick of Thai Chicken Curry, conveniently cooked in a slow cooker.
The broth is rich in flavor, yet very light. If you wanted to make it creamier, though, you can add a can of organic coconut milk.
Ingredients:
β’ 1 3/4″ piece of organic ginger β peeled and grated
β’ 4 cloves organic garlic β minced
β’ ΒΌ Cup organic Red Curry Paste
β’ 2 TBS Fish Sauce
β’ 2 TBS raw honey
β’ 4 cups free-range Chicken Stock
β’ 1 Pound Boneless, Skinless free-range chicken breasts or thighs β cut into 1 Β½ββ pieces
β’ 2 organic yellow onions β diced
β’ 1 organic sweet red Bell Pepper β diced
β’ 2 (14 ounce) cans Full Fat organic Coconut Milk
β’ 6 ounces organic egg noodles
β’ 1-2 tbs organic cilantro β chopped, plus more for garnish
β’ 1 organic lime β juiced
β’ Kosher Salt and Ground Black Pepper
β’ Optional Garnishes: organic lime wedges, chopped organic peanuts, sliced organic Red Chili, or sliced organic Green Onion
Instructions:
1. First, in the bowl of your slow cooker, combine the ginger, garlic, curry paste, fish sauce, honey, chicken stock, 1 teaspoon salt and 1/4 teaspoon pepper. Whisk to combine. Throw in the chicken, onion and bell pepper.
2. Next, cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours. Remove top and stir in the coconut milk (optional) and noodles. Cover and continue to cook on LOW for 8-15 minutes or until pasta is al dente.
3. Just before serving, stir in the cilantro and lime juice. Season with salt and pepper to taste.
4. Lastly, ladle the soup into serving bowls and top with desired garnishes. Enjoy!
