Everyones Favorite Vegetable Soup Gets An Upgrade

If your childhood was anything like mine, you probably have memories of being served Campbell’s Vegetable Soup with a Hot Grilled Cheese at some point. Possibly coming in for lunch on a cold winter day or when you were feeling sick you were comforted by the warm familiar flavour of that classic can. I know I have many memories similar to that from when I was growing up. I still crave that familiarity and comfort today as an adult.

Unfortunately today as an adult I realize that canned soups, although fast and convenient, are not necessarily the most nutritious meal choice. That is why I decided to find a healthy and organic alternative to my favourite comfort soup. I found this recipe!

After giving it a little organic tweak it satisfied my canned soup craving perfectly!

Moreover, it tastes better than I imagined it would! Not to mention being home-made with organic ingredients its waaay better for you! Ingredients:

-1/2 tbsp organic olive oil. (Or better yet use Organic Avocado Oil here)
-1/2 a organic white onion chopped
-3 cloves of organic garlic
-1/2 a organic red bell pepper chopped
-1 and 1/2 ribs organic celery chopped
-1/2 cup organic baby carrots chopped
-1 large organic sweet potato chopped (could substitute white potato!)
-1/2 cup fresh organic peas
-2 cups organic vegetable broth
-2 cups water+ 2 cups of organic beef broth
-7 oz. or half a can diced organic tomatoes
-1 tsp organic basil
-1 tsp organic parsley
-1/2 tsp salt
-1/2 tsp organic pepper (or to taste)

Directions: Heat a large pot with olive oil over low-medium heat. Once hot, add chopped onions and cook until just softened (about 3-4min). Next add your garlic, red pepper & celery and cook for another 3-4 minutes. Now add your tomatoes, liquids and toss in all the other vegetables along with your organic beef broth and spices. Bring to a low-boil and then turn down to about medium heat and simmer uncovered for around 40-45 minutes or until the carrots and potatoes a soft. Serve and enjoy!
