The Perfect Vegan Ramen for Cold Days

How about a piping hot bowl of Vegan Ramen to cap off your weekend?

Ah, Ramen: one of Japan’s best contribution to the culinary food, it is our to-go food when we crave for something heart, rich, filling, and hot. Nope, I’m not talking about the yellow brick “Ramen” that you can buy with a few coins at the supermarket. I’m talking about authentic Japanese Ramen, baby!

It is the perfect bowl of everything you’d probably crave on a chilly day. Hot broth? Check! Meat? Check! Egg? Got it! Now this isn’t a problem if you’re not vegan or vegetarian.

This dish has been a lot of people’s favorites and you can see that from the many Ramen restaurants that pops up all over the country. There isn’t a city—and I mean there is NO city that doesn’t have a Ramen restaurant in it.

However, if you’ve cut meats from your diet, it could be quite a challenge to find a Ramen house that strictly serves a no-meat order.

Luckily, you can make it at home and our friends at Tasty made a video to guide you with the entire process. This will definitely guarantee that your Ramen is only just veggies–no meat nor meat extracts.

 

INGREDIENTS:

2 tablespoon oil
1 teaspoon sesame oil
1 tablespoon organic ginger, minced
6 cloves organic garlic, minced
1 onion, diced
6 cups vegetable stock
1 1/2 cup water
1 cup organic shiitake mushrooms, stems removed and sliced
2 tablespoon soy sauce
1 teaspoon organic miso paste
Ramen noodles

Toppings:

Bok choy, sautéed
Peppers, sliced and sautéed
Parsley
Kimchi
Nori
Rainbow carrots, diced and sautéed
Radishes, sliced
Onions, sliced and sautéed
Spinach
Bean sprouts, sautéed
Corn
Jalapeños, sliced and sautéed
Green onions, sliced

Instructions:

1. First, heat the olive oil in a Dutch pot over medium heat.
2. Next, add the garlic, ginger, and onions and sauté until onions become translucent.
3. Afterwards, add vegetable stock, water, shiitake mushrooms, and soy sauce. Stir and simmer for at least 45 minutes, up to 3 hours. The longer you let the concoction simmer, the tastier the broth will become.
4. Lastly, add the miso paste, and stir.

Tadaaah! Ladle the broth into a bowl and add noodles and toppings of your choice.
