Zucchini grilled cheese sandwich, looks delicious right? It totally is! However you will have to find out for yourself and make one. Simple ingredients, easy method and it all can be done within 10-15 minutes.

I’m guessing you will be with me on this one. But do you remember back in the days when we didn’t even know what gluten was? Or when we didn’t fully realize the gravity of healthy ingredients being put into our bodies. Those days when a grilled cheese sandwich was a common comfort food and a very quick meal.

Well as you can see in the picture above, those days can be reinvigorated with healthy gluten free (bread free in fact) ingredients! Let’s talk about zucchini for a minute. It is highly nutritious! With it being very low in calories and high in fiber, it works very well at making you feel full without the heaviness of the extra calories.

These super vegetables are rich in anti-oxidants such as vitamin C, vitamin A, superoxide dismutase (SOD) and glutothione peroxidase. Also containing other vitamins like vitamin K, B-6, folate and riboflavin. Furthermore they are high in certain minerals such as potassium and maganese.

Zucchini contains inulin which is a special kind of fiber classified as “prebiotic fiber.”

  • 1 large free ranged egg
  • 1/2 cup of freshly grated organic Parmesan cheese
  • 2 organic green onions, thinly sliced
  • 1/4 cup of organic cornstarch
  • Himalayan or sea salt
  • freshly ground organic pepper
  • organic avocado or organic peanut oil for frying (be aware of peanut allergies)
  • 2 cups of organic cheddar cheese
